Orange Plaice Rolls

450 g of Panapesca plaice fillets
2 Carrots
2 Oranges
EVO oil to taste
Salt to taste
Pepper as needed
Breadcrumbs to taste
Parsley to taste

Method

Peel the carrots and cut them into slices using a potato peeler.

Grate the orange zest and extract the juice.

In a bowl, combine the breadcrumbs, orange zest and juice, chopped parsley, salt, pepper, and extra virgin olive oil.

Cut the plaice fillets in half and season with salt.

Place a slice of carrot on top of the fish and roll up.

Hold the roll in place with a toothpick.

Cover the rolls with the flavored breadcrumbs.

Place them in a baking dish, pour a drizzle of oil and some orange juice and bake.

Cook for 15/20 minutes.

Serve piping hot, accompanied by a side of vegetables.
